Simple Halloumi Stew

ingredients

  • 1 tsp olive oil
  • 100g halloumi, cut into cubes
  • 1 clove garlic, peeled and crushed
  • 210g tinned chopped tomatoes
  • 80g tinned chickpeas, drained
  • ½ tsp paprika
  • ¼ tsp mixed dried herbs
  • salt
  • pepper

method

Step 1

Heat the oil in a frying pan. Add the halloumi and fry for a few minutes on each side until golden. Remove the halloumi from the pan and set to one side.

Step 2

In the same pan, fry the garlic for a minute or so then add in the tomatoes, chickpeas, paprika and mixed herbs. Stir everything together and leave to simmer for a few minutes, until thickened a little. Season to taste.

Step 3

Stir the halloumi back through and serve up.
