Dry ingredients

  • ½ cup sunflower seeds
  • ½ cup pepitas
  • 1 cup rice bubbles
  • 2 tablespoon chia seeds
  • 2 tablespoon flaxseed meal
  • pinch of salt
  • Wet ingredients
  • 30g butter
  • ⅓ cup honey
  • 1 teaspoon vanilla essense

method

Mix all of the dry ingredients in a bowl. To make the caramel - Melt butter in pan. Itll foam and become golden. You’ll know it’s ready when you can draw a line through it and it has a thicker, caramel consistency. Add the caramel to the bowl of dry ingredients and mix. You’ll have to work quickly because the caramel will set fast. Press into a lined baking tray and leave in the fridge to set. Once set, cut into bars. Optional - dip or drizzle them in melted chocolate and allow to set. Store in an airtight container in the fridge.
