Essentially a version of the nachos or tacos recipe, but served with rice.

ingredients

  • ½ cup basmati rice
  • 5 cubes bean mix
  • 1 avocado
  • 1 lime
  • ⅔ cup cheese, grated
  • 9 cherry tomatoes
  • 1 spring onion, or pickled red onions
  • ⅔ cup greek yoghurt
  • iceberg lettuce
