Refried Beans

  • 400 g black beans (drained and rinsed)
  • 16 g tomato paste
  • 20 g chipotle paste
  • 100 ml Massel “chicken style” stock (prepared)
  • Olive oil, for cooking
  • Black pepper, to taste

method

Step 1

Heat a large, wide-based pan (non-stick preferred) over medium heat and add a drizzle of olive oil.

Step 2

Add the tomato paste, black beans, and chipotle paste. Stir for about 1 minute until the beans are coated.

Step 3

Pour in 100 ml of Massel chicken-style stock and cook for 5–6 minutes, until the liquid reduces and thickens.

Step 4

Remove from the heat. Lightly mash some of the beans with a potato masher or fork, leaving some whole for texture.

Step 5

Season with a generous grind of black pepper, then serve.
