Radish, Apple, and Red Cabbage Slaw

- 4–5 radishes, thinly sliced or julienned
- 1 apple granny smith apple julienned
- 2 tablespoons fresh lemon juice
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon apple cider vinegar (or white wine vinegar)
- 1 teaspoon honey or maple syrup (optional for sweetness)
- Salt and freshly ground black pepper, to taste
- 2 tablespoons fresh parsley, chopped

Prepare the Vegetables: Thinly slice or julienne the red cabbage, radishes, and apple.

Make the Dressing: In a small bowl, whisk together the lemon juice, olive oil, apple cider vinegar, honey (if using), salt, and pepper until well combined.
