Quinoa & Oat Porridge

- ⅓ cup red quinoa
- 1 cup rolled oats
- 1 ⅓ cups water
- 1 ⅓ cups milk, plus extra 1/2 cup for serving
- 8 cardamom pods
- 1 tbsp maple syrup
- 40g muesli
- Poached fruit (optional)
- Extra milk, to serve
method
- Rinse the quinoa thoroughly under cold water.
- In a medium saucepan, combine quinoa, rolled oats, cardamom pods, water, and 1 1/3 cups milk.
- Cook over medium-low heat for about 20 minutes, stirring often. Add a splash of water if it starts to stick or dry out.
- Once the grains are soft and the mixture is creamy, stir in the extra 1/2 cup of milk to loosen the texture.
- Divide into bowls. Drizzle with maple syrup, top with muesli, and add a splash of milk.
- Optional: add poached fruit for extra flavour and texture.
notes
You can substitute other milk types (almond, oat, soy) as needed.
Adjust sweetness to taste by adding more or less maple syrup.
