Memsahib’s Mess (Dishoom)
This is our version of a classic Eton Mess, with the addition of gulkand and use syrup.
We imagine that this is what the well to do Memsahits of Malabar Hill might have made for their fancy parties.
Gulkand is an Indian rose petal jam, apparenty good for cooling the body. You can either buy rose syrup or make it at home.
ingredients
- 250g strawberries, hulled
- 45g gulkand
- 35ml [recipe:Rose Syrup]
- 250ml double cream
- 4 meringue nests
method
- Whip the cream in a bowl to soft peaks.
- Set aside 1 lange or 2 small strawberties for serving. Cut the remaining strawbenties into quarters (or smaller pieces if the strawbernes are very big) and combine with the strawberry and rose mixture.
- Finely slice the remaining 1 or 2 strawberries.
- When you’re ready to serve, break the meringues into pieces and drop them into a large bowl. Add the whipped cream and strawberry and rose mixture, and fold until combined but not totally mixed.
- Divide between serving bowls and top with the sliced strawberries. Serve immediately.
