Hawaiian Egg Fried Rice

  • 1½ tsp vegetable oil
  • 3 garlic cloves, peeled and crushed
  • 255g vegan bacon, chopped
  • 500g cooked long grain or jasmine rice, cooled
  • 250g peas
  • 6 large eggs
  • 6 egg whites
  • 180g fresh pineapple, chopped
  • 6 tsp light soy sauce
  • 3 spring onion, finely chopped

method

Step 1

Heat the oil in a large frying pan or wok over a medium to high heat and fry the garlic and bacon for 3-4 minutes until crispy. Add the cooked rice and peas and stir for a few minutes to heat through.

Step 2

Beat the eggs and egg whites together in a bowl. Push the rice and peas to one side of the pan and pour the eggs into the empty side. Use a wooden spoon to scramble the eggs then mix through the rice. Stir in the pineapple and add the soy sauce.

Step 3

Give everything a final mix to make sure it’s hot through then serve with the spring onion scattered over the top.
