Giant Berry Pancake

  • 50g self-raising flour
  • 1/4 tsp baking powder
  • 1 pinch salt
  • 1 egg
  • 2 egg whites
  • 65g fat-free yoghurt
  • 1 tsp vanilla extract
  • 1 tsp coconut oil
  • 60g berries
  • 25g maple syrup

method

Step 1

Preheat the grill to a medium heat. Combine the flour, baking powder and salt in a large bowl and make a well in the centre. Add the eggs, egg whites, yoghurt and vanilla extract and whisk until smooth.

Step 2

Melt the oil in a small non-stick frying pan over medium heat, then pour in all of the batter. When bubbles appear on the batter’s surface, scatter the fruit over the top. Cook for another 2 minutes, then slide under the grill and cook for 3-4 minutes until golden on top. To check that the pancake is cooked, insert the tip of a knife into the centre; if it comes out clean, it’s ready.

Step 3

Slide the pancake onto a plate, drizzle over the maple syrup and serve.
