Chicken Potato Chickpea Bake
Instructions:

Preheat your oven to 180°C (356°F).

Chop the potatoes, red onions, and peppers into bite-sized pieces. Drain and rinse the chickpeas.

In a large bowl, combine the chopped vegetables and chickpeas with half of the dressing. Toss well to coat evenly.

Spread the vegetable mixture onto a lined baking tray in a single layer.

Slice the chicken breasts into even strips or chunks. Place them in a separate bowl and mix with the remaining half of the dressing.

Spread the chicken on a second lined baking tray.

Bake both trays in the oven:
- Vegetables: ~35–40 minutes, tossing halfway through.
- Chicken: ~25–30 minutes, until fully cooked and lightly golden.

Let everything rest for a few minutes before serving or portioning into meal prep containers.
