Chicken Potato Chickpea Bake

Instructions:

  1. Preheat your oven to 180°C (356°F).

  2. Chop the potatoes, red onions, and peppers into bite-sized pieces. Drain and rinse the chickpeas.

  3. In a large bowl, combine the chopped vegetables and chickpeas with half of the dressing. Toss well to coat evenly.

  4. Spread the vegetable mixture onto a lined baking tray in a single layer.

  5. Slice the chicken breasts into even strips or chunks. Place them in a separate bowl and mix with the remaining half of the dressing.

  6. Spread the chicken on a second lined baking tray.

  7. Bake both trays in the oven:

    • Vegetables: ~35–40 minutes, tossing halfway through.
    • Chicken: ~25–30 minutes, until fully cooked and lightly golden.
  8. Let everything rest for a few minutes before serving or portioning into meal prep containers.

  • 1 tsp Garlic
  • 1 Tbsp Oregano
  • 2 squeezed lemons
