Cauliflower Gratin with Veggie Chicken

  • 495g small cauliflower florets
  • 30g butter
  • 6 tsp plain flour
  • 480mL semi-skimmed milk
  • 105g cheddar cheese, grated
  • 75g baby spinach
  • salt
  • pepper
  • 255g vegetarian chicken pieces
  • 15g panko or fine white breadcrumbs

method

Step 1

Preheat the oven to 180°C. Place the cauliflower in a bowl, add a splash of water then cover and microwave for 4–5 minutes until just tender.

Step 2

In a small saucepan, melt the butter then stir in the flour to make a paste. Gradually add in the milk, stirring continuously to create a smooth sauce. Once all of the milk has been added, stir in most of the cheese and the spinach and stir until the cheese has melted and the spinach has wilted. Season to taste then add in the chicken pieces and cauliflower florets.

Step 3

Place the cauliflower mix in a small baking dish and scatter over the remaining cheese and breadcrumbs. Bake in the oven for 10 minutes until the top is golden brown then serve.
